Garden Scraps

In this dish I used my garden scraps and what I had in my fridge. I used the entirety of the daikon radish (tops included), carrots tops, and a zucchini. I want to challenge you to rethink what is "waste." Is that carrot top actual waste or can you use it to substitute a some other leafy green you added to your grocery list. There is some fun innovated ways to use all of the use every single bit of your "waste."


Garden harvest: daikon (white radish), carrots (they are so stubby), and swiss chards




This is a fun way to also try out new spices in a dish. I really like how this dish turned out. It has a rich spice to it that leaves my mouth a little on fire. If you're not a spice person I'd recommend toning down the spice then.


I paired these greens with fried chicken I made the other night. This is a great main dish for those vegetarians/vegans out there. Or if your a meat lover adds a pack of ground meat to this dish.


Seasoning ingredients



Garden "Waste" Stir Fry

Ingredients

  • 2 swiss chards leaves (kale is fine too)

  • 1/2-1 cup of water (depending on how much greens you put)

  • 3 daikon tops and 1 medium size daikon grated

  • 6 carrot tops

  • 5 spring onion

  • 1 zucchini

  • 2-3 tablespoons of sesame oil

  • 4 tablespoons of Soy sauce

  • 2 teaspoons of ground white pepper

  • 3-4 teaspoons of turmeric

  • 1 tablespoon of Japanese spice (this is slow heat so maybe air on the side of caution)


Instructions

  1. Gather garden scraps wash and cut them.

  2. Heat up pan with oil and then slowly add greens, be sure you add the zucchini soon that will take the longest to cook (add meat now if you want that in your dish.

  3. After about 5 minutes of sautéing the veggies go ahead at that cup of water, and reduce heat to simmer.

  4. Keep on shimmer for about 15- 20 min.

  5. Take the heat off and try your creation.


Recipe Notes I used ginger water instead of just plain water to give it an immunity boost and also to give it more of a spice kick. Turmeric is also a great immunity boost too.
